INGREDIENTS to serve 2 people :-

potatoes washed but not peeled

2

spring onions finely shredded

oz

portion of cooked chicken finely shredded

salt & pepper to taste

1

teaspoon

chopped parsley

 

METHOD :-

Place the potatoes in a saucepan and cover with water.

Bring to the boil and simmer until the potatoes are just cooked.

(The point of a knife goes in and comes out easily).

Drain and allow to cool slightly before peeling, and grating into a large mixing bowl.

Add the rest of the ingredients, and combine well.

Divide the mix into two equal pieces and shape each into a flattened disc.

Shallow fry until golden brown.
