Crafty ways with one chicken . . . How far can it stretch?
Take one 2½ to 3 lb chicken, remove from wrapping, and remove & discard the innards.
Place the chicken in a saucepan of cold water, just to cover the chicken.
Cover with a lid and boil for 1 hour until the chicken is just tender.
Carefully remove the chicken from the liquid and allow the chicken to cool slightly before removing the skin, bones, and any gristle.
Keep the liquid chicken stock.
Chop the chicken meat fairly finely.
Keep 2 oz portion for soup. Divide the rest into three even sized portions about 4 oz each.
