CHEESE SCONES

INGREDIENTS to serve 6 people :-

150 g (6 oz) self-raising flour

1 level teaspoon chilli powder

25 g (1 oz) butter or margarine

75 g (3 oz) grated cheese

1 large egg

2 tablespoons buttermilk

¼ teaspoon mustard

METHOD :-

Into a large bowl, sieve the raising flour and chilli powder.

Rub the fat into the flour mix uisng the tips of your fingers.

Add the grated cheese, egg, buttermilk and mustard, then stir together and form into a ball.

Lightly knead, then pat out to the thickness of your thumb knuckle; about 25 mm (1 inch).

Cut out with a 50 mm (2 inch) cutter and place on a baking tray.

Bake at Gas mark 8 / 450oF. / 230oC. for 10 - 15 minutes until golden brown.
