INGREDIENTS to serve 2 people :-
110 g (4 oz) self-raising flour
1 large egg
75 ml (3 fl oz) milk
100 g (4 oz) sweetcorn
1 teaspoon chopped chives
salt and pepper to taste
2 tablespoons vegetable oil
METHOD :-
In a large bowl, mix the flour, egg, and milk into a batter.
Add the sweetcorn and seasonings.
Heat a frying pan and add the oil.
Drop dessertspoons of the mixture into the hot fat. Leave to sizzle until they form a crispy base.
Then turn each fritter over and sizzle its other side until crispy. Serve and eat immediately.
