SOFT BERRY MERINGUE

Use an 18 cm (7") loose bottom flan ring.

INGREDIENTS to serve 4 - 6 people :-

250-300 ml (half pint) double cream

1 tablespoon sugar

4 meringue nests broken into pieces

225-250 g (8 oz) soft berry fruit - strawberries, raspberries, blackberries, etc

strawberry sauce

METHOD :-

Whip the cream until it holds its shape, then stir in the sugar and broken meringue.

If freezing the pudding, line the flan ring with cling film.

Spoon the mixture into the flan ring.

Either chill for 2-3 hours, or freeze for at least 4 hours to become firm, and an hour before serving move into a fridge.

When ready to serve, turn out onto a plate, and remove any cling film.

Scatter soft berry fruits over the top with the strawberry sauce.
