SMOKED FISH WITH POTATOES

INGREDIENTS to serve 1 person :-

1 large potato

1 small onion ~ chopped

1 stick celery ~ chopped

110 g (4 oz) smoked cod or haddock

3 tablespoons milk

chopped parsley

salt and pepper

METHOD :-

Wash but do not peel the potato, and cut into even sized pieces.

Place them in a saucepan with the chopped onion and celery.

Just cover with water and bring to the boil, then simmer until just soft.

Cut up the fish into even sized pieces.

Add the fish pieces, milk, and chopped parsley to the saucepan.

Bring back to a simmer until the fish is just cooked.

Season with salt and pepper before serving.
