VEGETABLE GOULASH

INGREDIENTS to serve 2 or 3 people :-

1 chopped onion

1 tablespoon vegetable oil

1 chopped carrot

1 chopped leek

1 chopped parsnip

110 g (4 oz) chopped green beans

1 desertspoon paprika

550 ml (1 pint) vegetable stock (1 stock cube)

1 tin baked beans

salt and pepper

METHOD :-

Fry the chopped onion in the vegetable oil in a saucepan or wok.

Add the chopped vegetables, coat well, and fry until softened.

Add the remaining ingredients except the baked beans.

Simmer until soft for about 30 - 40 minutes.

Add the baked beans and season to taste.
