CHOCOLATE & NUT FUDGE

You can vary the flavour of this simple to make fudge by adding any combination of fillings.

INGREDIENTS to make about 1 kg (2 lb) :-

450 g (1 lb) plain chocolate with high cocoa solid content of 50% or above

405 g (14 oz) can condensed milk

50 g (2 oz) chopped nuts or dried fruit or chopped glacé ginger

METHOD :-

Melt the chocolate in a large bowl over a saucepan of simmering water.

Add the condensed milk to the melted chocolate and stir in the chopped nuts, fruit, or ginger.

Pour the mixture into a greaseproof paper lined 20 cm (8") square tin.

Leave to cool, and then refrigerate until set.

Turn out and cut into pieces with a sharp knife.
