INGREDIENTS to serve 1 person :-
125 g (4½ oz) (¼ of 500 g packet) ready-made puff pastry ~ at room temperature
2 sprats ~ gutted, boned, and cleaned
beaten egg wash
grated lemon rind
chopped parsley
black pepper to taste
METHOD :-
Roll out the puff pastry into a rectangle about 20 cm x 10 cm (8" x 4").
Brush with egg wash, and scatter with lemon rind, chopped parsley, and black pepper.
Lay the prepared sprats on top of the flavourings.
Bake at Gas Mark 7 / 425°F. / 210°C. (190°C. for fan oven) for 12 - 15 minutes.
