HONEY COLESLAW INGREDIENTS to serve 4 people :-
450 g (1 lb) red cabbage - shredded
110 g (4 oz) carrot - grated
110 g (4 oz) red apple - chopped
50 g (2 oz) dried cranberries
handful sunflower seeds, pumpkin seeds, sesame seeds
2 tablespoons extra virgin olive oil
1 tablespoon white wine vinegar
1 dessertspoon honey
salt, pepper, mustard to taste
LEMON COLESLAW INGREDIENTS to serve 4 people :-
450 g (1 lb) white cabbage - shredded
110 g (4 oz) green apple - chopped
50 g (2 oz) runner beans - chopped
50 g (2 oz) frozen peas - thawed
50 g (2 oz) sultanas
handful chives and parsley - chopped
handful sunflower seeds, pumpkin seeds, sesame seeds
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1 dessertspoon sugar
salt, pepper, Dijon mustard to taste
METHOD FOR BOTH COLSESLAW :-
Prepare the shredded/chopped/grated vegetables and fruit.
Dry fry the seeds in a frying pan.
Mix the extra virgin olive oil with the remaining ingredients.
Blend all the ingredients shortly before serving.
