GRIDDLE CAKES WITH SPICY YOGHURT DIP

INGREDIENTS to serve 2 people :-

110 g (4 oz) self-raising flour

1 large egg

75 ml (3 fl oz) milk

50 g (2 oz) grated cheese

25 g (1 oz) diced cheese

1 teaspoon mustard

1 teaspoon chopped chives

salt and pepper to taste

1 tablespoon olive or vegetable oil

METHOD :-

In a bowl, mix the flour, egg, milk, and grated cheese into a batter.

Add the diced cheese and seasonings. Heat a frying pan and add the oil.

Drop dessertspoons of the mixture into the hot fat. Leave to sizzle until they form a crispy base.

Then turn each griddle cake over and sizzle its other side until crispy. Serve and eat immediately.

SPICY YOGHURT DIP

INGREDIENTS :-

150 ml (5 fl oz) plain yoghurt

1 dessertspoon fruity chutney

1 teaspoon curry paste

1 teaspoon tomato purée

salt and pepper to taste

METHOD :-

In a small bowl, mix all the ingredients together until well blended. Adjust the seasoning to taste.
