KEY LIME MOUSSE

INGREDIENTS to serve 2 people :-

4 limes - unwaxed if possible

150 ml (5 fl oz) double cream

405 g (14 oz) can condensed milk

METHOD :-

Grate the zest and squeeze the juice of the limes into a bowl.

Whisk all the ingredients together in the bowl for a few minutes.

Spoon the mixture into individual moulds or glasses.

Place in refrigerator for at least 2 hours to set.

CHOCOLATE SAUCE

INGREDIENTS to serve 2 people :-

10 g (half oz) butter

150 ml (5 fl oz) double cream

1 dessertspoon muscovado sugar

110 g (4 oz) dark chocolate (50% cocoa solids)

METHOD :-

Melt the butter in a small saucepan.

Add the cream and sugar, and bring to the boil, stirring to ensure the sugar dissolves.

Off the heat, stir in the chocolate broken into pieces.
