INGREDIENTS to serve 2 people :-

150 ml (5 fl oz) whipping cream

110 g (4 oz) cooking chocolate (minimum 50% cocoa solids)


Lightly whip the cream until floppy.

Place a large clean empty glass bowl over a small saucepan of gently simmering water.

Make sure that the water does not touch the bowl or get into the bowl;

otherwise, the chocolate will seize up.

Break pieces of chocolate into the bowl and allow it to melt.

Once melted remove the bowl from the heat.

Pour most of the cream into the melted chocolate and lightly blend together.

Place a small amount of whipped cream into the bottom of two small serving glasses.

Top with some of the chocolate mousse.

Repeat this process to get a marbled effect until all ingredients are used.

Chill before serving.
