INGREDIENTS to serve 6 people :-
700 g (1½ lb) swede - peeled and evenly diced
450 g (1 lb) cooking apples - peeled and evenly diced
1 tablespoon cold water
25 g (1 oz) butter [optional]
1 teaspoon lemon juice
half teaspoon allspice
salt and pepper to taste
METHOD :-
Place the diced swede in a saucepan and cover with water.
Put the lid on, and gently boil until soft and tender.
Meanwhile place the diced apples in a separate saucepan with the cold water.
Put the lid on and on the lowest heat gently stew until soft.
Mash the apples to a purée.
Drain the swede, return the pan to the heat to dry out the swede, and then mash.
Remove from the heat; add the apple purée, and all the remaining ingredients.
Season to taste.
Spoon into a warmed serving dish and serve.
