MEAT UNDER WRAPS

INGREDIENTS to serve 4 people :-

Filling:

700 g (1 lb) finely shredded cooked meat

1 bunch spring onion - finely chopped

2 chillies - finely chopped

1 teaspoon Chinese five-spice powder

4 tablespoons Hosin sauce

2 tablespoons ginger preserve

seasoning

Topping:

1 packet ready-made filo pastry

1 large egg - beaten

METHOD :-

In a large bowl, mix the filling until thoroughly combined. Season well.

Lay out one sheet of filo pastry on a work surface.

Keep the rest of the pastry covered with a damp piece of kitchen paper.

Place a dessertspoon of the filling at one end of the pastry.

Brush all edges with beaten egg.

Fold over the sides of the pastry to enclose the filling, and roll up like a Swiss roll.

Repeat this process with the remaining filling and sheets of pastry.

Chill until required.

Either bake at Gas Mark 7 / 425F / 220C (200C for fan oven) for 15 minutes, or deep fry at 180C for 5 minutes, until crispy and golden brown.
