INGREDIENTS to serve 4 people :-


450 g (1 lb) cooked turkey - shredded

1 large onion - sliced

1 clove garlic - crushed

2 sticks celery - finely chopped

1 dessertspoon olive oil

1 dessertspoon flour

275 ml (10 fl oz) apple juice or white wine

110 g (4 oz) frozen peas



450 g (1 lb) sweet potatoes

2 Cox apples

50 g (2 oz) melted butter



Place the shredded turkey in an ovenproof dish.

Fry the onion, garlic, and celery in the oil until soft but not brown.

Add the flour off the heat and stir well.

Stir in the liquid and bring the mixture to the boil.

Once thickened remove from the heat, add the frozen peas, and season well.

Pour the pea mixture over the turkey and leave to cool.


Place the sweet potatoes in a saucepan and just cover with water.

Boil the potatoes until a knife goes in and comes out easily.

Drain, peel, and cut them into 0.5 cm (") thick slices.

Core and slice the apple to a similar thickness.

Arrange overlapping slices of sweet potato and apple over the turkey base mixture.

Brush with melted butter, and bake at Gas Mark 6 / 400F / 200C (180C for fan oven) for 30 minutes or until the topping is crispy.
