BULGAR OR CRACKED WHEAT SALAD (TABBOULETH)

INGREDIENTS to serve 4 people :-

110 g (4 oz) bulgar or cracked wheat

570 ml ( 1 pt) cold water

1 small red onion

110 g (4 oz) tomatoes

110 g (4 oz) cucumber

50 g (2 oz) black olives - stoned

50 g (2 oz) fresh coriander and parsley

3 tablespoons olive oil

3 tablespoons lemon juice

1 ripe avocado - diced

salt & pepper to taste

METHOD :-

Place the cracked wheat in a large bowl and completely cover with cold water.

Leave to soak for 20 - 30 minutes depending on the age of the cereal.

Finely chop the onion, tomatoes, cucumber, black olives, coriander, and parsley.

Place a clean tea towel into a sieve and drain the soaked cereal into it over a sink.

Draw the tea towel together and wring out the excess water until the cereal is dry.

Place the dry cereal into a dry bowl.

Mix in the chopped vegetables, herbs, olive oil, lemon juice, and diced avocado.

When thoroughly combined and seasoned to taste, place in a serving dish.
