INGREDIENTS to serve 4 people :-
50 g (2 oz) walnut pieces
50 g (2 oz) sage leaves
2 cloves garlic - crushed
200 ml (7 fl oz) olive oil
1 tablespoon lemon juice
25 g (1 oz) freshly grated Parmesan cheese
salt & pepper to taste
METHOD :-
Place all the ingredients except the Parmesan cheese, salt & pepper into a food processor.
Billy whiz to make a coarse paste.
Season lightly and stir in the grated Parmesan cheese.
USAGE :-
Stir the pesto into cooked pasta, couscous, or rice, or spoon into vegetable soup.
Alternatively, dollop it onto cooked meat, fish, or poultry.
It is ideal as a speedy standby for a quick meal, as it can be frozen or stored in the fridge.
