HERBY CRUMB COATING

INGREDIENTS to serve 4 people :-

110 g (4 oz) dry sliced bread

1 clove garlic - crushed - (optional)

4 green or black olives - stoned - (optional)

50 g (2 oz) your favourite herb(s) such as parsley, basil, thyme, chive, rosemary, or lemon balm

METHOD :-

Billy whiz all the ingredients in a food processor.

If using rosemary, chop the needles finely before adding to the mix.

USAGE :-

Brush the meat or fish with beaten egg before coating with the herby crumbs.

Either roast or grill the coated meat or fish until golden brown and crispy.
