INGREDIENTS to serve 2 people :-

1 packet tortillas - use two and save the rest

1 small ripe avocado pear

1 squeeze lemon juice

1 dessertspoon mayonnaise

1 handful shredded lettuce or raw spinach or watercress

225 g (8 oz) skinless smoked mackerel fillets

2 tablespoons Quark or cream cheese or mayonnaise


Peel, stone, and mash the avocado with a fork.

Add the lemon juice and mayonnaise, and then mix well.

Flake the mackerel in a small bowl, carefully removing all the bones.

Add the cheese or mayonnaise and mix well to combine.

Lay a tortilla on a chopping board and spread with half the avocado mixture.

Cover with half the salad greens. Spoon half the mackerel mixture down the middle.

Roll the tortilla to enclose the entire filling. Repeat this process with the other tortilla.

Cut the rolled tortillas in half at an angle and serve.
