SMOKED MACKEREL PÂTÉ

INGREDIENTS to serve 4 people :-

225 g (8 oz) skinless smoked mackerel fillets

250 g (9 oz) tub Quark

rind of a lemon

1 tablespoon lemon juice

1 tablespoon chopped parsley

salt & pepper to taste

METHOD :-

Flake the fish, carefully removing all the bones.

Place the flaked fish in a food processor and billy whiz until processed.

Add the rest of the ingredients and whiz until well blended.

Adjust the flavouring and seasoning to taste. Chill until required.
