INGREDIENTS to make a dozen bars :-
225 g (8 oz) dates - stoned and chopped
150 ml (5 fl oz) apple juice
110 g (4 oz) margarine or butter at room temperature
110 g (4 oz) wholemeal self-raising flour
50 g (2 oz) oats
50 g (2 oz) unsweetened desiccated coconut
1 large egg
METHOD :-
Place the chopped dates and apple juice in a saucepan.
Boil for about 2 minutes until the dates are soft.
Remove from the heat and leave to cool completely.
Cut the margarine or butter into small pieces in a mixing bowl.
Add the flour and oats, and rub the fat into the dry ingredients.
Add the softened dates and the coconut, and stir until well mixed.
Add the egg and combine well with all the ingredients.
Place the mixture in a greased 18 cm (7") square baking tin.
Bake at Gas Mark 4 / 350°F / 180°C (160°C for fan oven) for 25 - 30 minutes until well risen, golden brown, and firm to the touch.
Leave to cool slightly before removing from the tin and slicing into bars.
