APPLE CAKE

INGREDIENTS to make a 1 kg (2 lb) loaf :-

110 g (4 oz) margarine

200 g (7 oz) dried stoned dates - chopped

225 g (8 oz) cooking apple - peeled, cored, and grated

1 tablespoon ground cinnamon

1 pinch salt

75 g (3 oz) sultanas

2 medium eggs

175 g (6 oz) self-raising flour

75 g (3 oz) oats

150 ml (5 fl oz) milk or unsweetened coconut milk

METHOD :-

Grease and line a 1 kg (2 lb) loaf tin.

Place the margarine, chopped dates, grated apple and cinnamon into a food processor.

Billy whiz until thoroughly blended.

Scrape the date and apple mixture into a large mixing bowl.

Add the rest of the ingredients, and mix well.

Put the mixture into the prepared loaf tin, and level the surface of the cake.

Bake at Gas Mark 4 / 350°F / 180°C (160°C for fan oven) for 45 - 60 minutes.

The cake should feel firm to the touch, be golden brown in colour, and have shrunk slightly away from the sides of the tin.

Allow the cake to cool in the tin for about 15 minutes, before turning out.
