LEEKS WITH BACON

INGREDIENTS to serve 1 person :-

1 teaspoon vegetable oil

2 rashers streaky bacon - thinly sliced

110 g (4 oz) leeks - trimmed & thinly sliced

50 g (2 oz) frozen peas or beans

50 g (2 oz) Cheddar cheese - grated

1 medium egg

50 ml (2 fl oz) dry sherry or cider or apple juice

METHOD :-

Add the oil to a small saucepan with the streaky bacon.

Stir fry until the bacon is crispy, then add the sliced leeks.

Stir until the leeks begin to soften, then add the peas or beans. Season lightly.

Mix the grated cheese, the egg, and the liquid together.

Place the cooked vegetables into an ovenproof dish and spread evenly.

Coat with the cheese and egg mixture.

Bake at Gas Mark 6 / 400F / 200C (180C for fan oven) for 8 - 10 minutes, or place under a hot grill, until golden and bubbly.
