TOMATO MOUSSE

INGREDIENTS to serve 4 people :-

can

chopped tomatoes

1 sachet

½

oz

gelatine granules [ 1 sachet of a 6 sachet 70g packet ]

1

teaspoon

sun-dried tomato purée

1

teaspoon

sugar

250

g

tub

9

oz

Quark

salt and pepper to taste

METHOD :-

Open the can of tomatoes, and empty the entire contents into a saucepan.

Heat the tomatoes until hot, and sprinkle the gelatine evenly over the tomatoes.

Stir the mixture until all the gelatine has dissolved.

Pour all the mixture into a food processor.

Add the sun-dried tomato purée and the sugar.

Billy whiz until smooth.

Leave to cool, and then add the tub of Quark.

Billy whiz again until thoroughly combined.

Season to taste.

Divide into individual ramekin dishes.

Refrigerate until set.

Serve with tomato and cucumber salad.
