SWEET POTATO & CELERIAC MASH

INGREDIENTS to serve 4 people :-

sweet potato

celeriac

melted butter

tablespoons

warmed milk

freshly grated nutmeg

salt & pepper to taste

 

METHOD :-

Peel the vegetables and cut them into even sized pieces.

Place in a saucepan and just cover in water.

Boil for 25 minutes, or until the vegetables are soft.

Drain, and then put back on the stove to dry out any excess water.

Remove from the heat and mash until the vegetables are smooth.

Add the melted butter and warm milk, grate in some nutmeg, and season well.

At this stage, you can allow the vegetables to cool, and then refrigerate for 24 hours.

Place in an ovenproof dish and bake at Gas Mark 6 / 400°F / 200°C (180°C for fan oven) for 15 - 20 minutes (or 30 minutes from cold).
