METHOD :-
Mix the couscous with the boiling water and leave for 10 - 15 minutes.
Meanwhile, seed and chop the tomatoes, and add any juice to the couscous mixture.
Chop the other vegetables.
Mix the olive oil, lemon juice, and seasonings into a vinaigrette.
Add the vinaigrette and chopped vegetables to the couscous and stir to combine.
Add the herb leaves and season to taste.
