TOMATO, BACON & EGG BRUNCH

INGREDIENTS to serve 1 person :-

1

whole

beefsteak tomato

1

rasher

Tesco pre-cooked crispy bacon

1

small

egg

salt & pepper to taste

 

METHOD :-

Place the tomato stalk end downward, and slice off the rounded end to form a small lid.

Scoop out the inside of the tomato (save juice for COUSCOUS SALAD).

Chop the rasher of bacon, and put the pieces into the tomato.

Break the egg into the tomato, and then season to taste.

Replace the lid on the tomato, and put on a baking sheet.

Bake at Gas Mark 5 / 375°F / 190°C (170°C for fan oven) for 8 - 10 minutes.
