LIME GRIDDLED LAMB

INGREDIENTS to serve 4 people :-

pieces

lamb neck fillet or loin steaks about 175 g / 6 oz each

1

lime

1

clove

garlic - crushed

1

teaspoon

cumin

salt & pepper to taste

1

tablespoon

olive oil

 

METHOD :-

If using neck fillet, then slice almost in half horizontally to make bigger flatter pieces of meat.

Grate the lime zest into a shallow dish, and add the crushed garlic, cumin, seasonings, and olive oil.

Place the lamb pieces in the dish and rub with the mixture. Heat the griddle until hot.

Add the lamb pieces and cook for about 3 to 4 minutes each side, or until griddled to your liking.

Serve on lime courgettes ...

 

LIME COURGETTES

INGREDIENTS to serve 4 people :-

courgettes

1

tablespoon

olive oil

1

lime

 

METHOD :-

Wash, top and tail, and then grate the courgettes.

Toss in a hot wok with the olive oil.

Add the juice of the lime, coat, and serve.
