LAMB WITH TOMATOES, ONIONS & COURGETTES

INGREDIENTS to serve 4 people :-

lamb fillet or boneless leg meat

olive oil

onion - finely chopped

garlic - crushed

tomatoes - cut into even sized 1" pieces

courgettes - cut into even sized 1" pieces

bunch

fresh mint

salt & pepper to taste

 

METHOD :-

Cut the lamb into bite sized pieces.

Heat the olive oil in a frying pan and sear the meat for about 5 minutes.

Finely chop the onion, crush the garlic, cut the tomatoes and courgettes into even sized 2.5 cm / 1" pieces.

Add the onion, garlic, and tomatoes to the pan, cover the pan, and simmer for 15 minutes.

Add the courgettes to the pan, and then simmer for another 5 minutes, or until the lamb is tender.

The tomatoes should have broken down, but the courgettes should retain a little bite.

Season well, then stir in the leaves from the mint, and serve.
