PEACH HEDGEHOGS

INGREDIENTS to serve 2 people :-

peaches

Stuffing :

amaretti biscuits

oz

demerara sugar

whole almonds

1

tablespoon

egg white

Decoration :

1

tablespoon

flaked almonds

 

METHOD :-

Cut the peaches in half and remove the stone.

Place the amaretti biscuits, sugar, and almonds in a food processor and whiz.

When a rough texture is obtained, add the egg white to just bind (one very quick whiz).

Divide the mixture equally between the four peach halves.

Stick the flaked almonds into the mixture similar to hedgehog spines.

When required, either grill until the almonds go brown, or place on a baking sheet and bake at Gas Mark 4 / 350°F / 180°C (160°C for fan oven) for about 15 minutes until just soft.
