METHOD :-
Sift the flour, baking powder, and bicarbonate of soda into a bowl.
Cut the butter into small pieces.
Rub into the mixture until it resembles fine breadcrumbs.
Stir in the sugar, dried fruit, lemon curd, and lemon zest.
Beat the eggs and stir into the mixture until thoroughly combined.
Using a teaspoon, take walnut size pieces of the soft dough and roll in the granulated sugar.
Carefully mould each piece into a ball.
Flatten slightly and place spaced apart on baking parchment on a baking tray.
About 6 per tray is ideal.
Bake at Gas mark 6 / 400oF. / 200oC. (180oC. for fan assisted oven) for 12 - 15 minutes until lightly golden.
Leave to cool slightly before removing onto a cooling tray.
Allow to cool completely before storing in an airtight tin.
