One 2 lb rectangular loaf tin or plastic box.

mixed soft fresh [not frozen] small even sized fruit such as strawberries, raspberries, blackcurrants & redcurrants |
METHOD :-
In a small saucepan, bring one third of the flavoured water to the simmer.
Add the sugar and gelatine, and while simmering stir until completely dissolved.
Remove from the heat. Add the remaining flavoured water and optionally the rose water.
Allow the jelly mixture to cool.
Meanwhile remove any stalks from the fruit and wash them.
Arrange a selection of the fruit attractively in the base of the rectangular container.
Pour in the cool jelly until it just covers the layer of fruit, and leave it to set.
Mix the remaining fruit together and place gently on top of the set jellied fruit.
Pour in the remaining jelly until it covers the fruit, and leave until it is just set.
Pour in any remaining jelly to form a smooth base, and leave until it is fully set.
To serve, dip the rectangular container into boiling water for a few seconds [count to 5] and invert onto a serving plate.
Serve slices of the jelly cut with a warm knife.
