METHOD :-
Either buy six shortbread biscuits or make your own.
Sieve the flour and rub in the butter until it looks like breadcrumbs.
Add the castor sugar and rub in until the mixture forms a ball.
Roll out onto a floured surface. The mixture should be 3 mm or 1/8" thick.
Using a heart shaped cutter, stamp out six biscuits, and place on a greased baking sheet.
Bake at Gas mark 5 / 375oF. / 190oC. (170oC. for fan assisted oven) for 10 - 15 minutes until pale beige in colour.
Allow to cool slightly before carefully removing from the baking sheet.
Allow to cool completely before spreading strawberry jam over the shortbread biscuits.
Hull and slice the strawberries evenly.
Starting from the outside edge, overlap the sliced strawberries onto the biscuits working towards the middle in a spiral.
Lightly dust with icing sugar just before serving.
