COCONUT MOUSSE

INGREDIENTS to serve 4 people :-

Quark skimmed milk cheese

double cream ( optional )

 

METHOD :-

Sprinkle the gelatine evenly over the surface of the hot water in a small bowl.

Help the gelatine to dissolve by stirring for about 5 minutes.

If it becomes stringy, place the bowl in a saucepan of hot water, so that the water comes halfway up the bowl, and simmer for about 2 minutes until the gelatine dissolves.

Place the Quark, sugar, and coconut milk in a food processor and whiz for about 1 minute until combined.

Add the dissolved gelatine and whiz for another minute until combined.

Optionally, whip the double cream until floppy and fold gently into the mixture.

Pour the mixture into individual moulds or glasses and refrigerate to set for about 2 hours.
