METHOD :-
Cut the bread into even sized pieces about 3 cm or 1" square.
Grease a 2-pint baking dish and arrange the bread, cheese, onion, and ham or corned beef in several layers.
Combine the eggs, milk, and seasonings and pour over the bread mixture.
Allow half an hour for the bread to absorb the milk mixture.
Bake uncovered at Gas mark 4 / 350oF. / 180oC. (160oC. for fan oven) for 30 - 40 minutes, until golden brown and well risen.
Alternatives to the ham are cooked smoked fish, cooked chicken, cooked beetroot, pulses or asparagus.
