QUICK FRIED SALMON

This is the quickest way to shallow fry salmon and so economical into the bargain.

You will need about 75 g ( 3 oz ) of salmon per person.

Place the piece of salmon in the freezer for ½ hour to just firm up.

Take a sharp knife and cut across the salmon, like slicing bread, into 1/8" to ¼" thin slices.

Chill until required.

Shallow fry in hot fat for about 2 minutes until just changing colour.

Turn over and similarly fry the other side, for about 4 minutes overall.

Serve with a green salad and your favourite mayonnaise.
