SALMON FISHCAKES

INGREDIENTS to serve 4 people :-

salmon fillets - boneless & skinless

tablespoon

egg white

1

pinch

salt & pepper to taste

Options : ( choose one of the following )

dessertspoon

freshly chopped herbs - parsley or dill

teaspoon

chopped gherkins or capers

½

teaspoon

dried chilli flakes

METHOD :-

Place the salmon in the food processor and process until the salmon is in small pieces but still has some texture.

Add the egg white and seasonings, plus the options if desired, and whiz until combined.

Remove the mixture from the machine and divide into 4 equal portions.

Mould each portion into a flattened disc and chill for at least 1 hour.

Shallow fry in hot fat until slightly brown on both sides.
