CRANBERRY, PEAR & WALNUT PUDDING

ripe conference or williams pears

fresh or frozen cranberries

METHOD :-

Wash and dice the pears.

Wash and pick over the cranberries.

Mix the pears, cranberries, and walnuts with the tablespoon of granulated sugar.

Place the mixture in a buttered 2-pint oval baking dish.

Mix the melted butter, beaten eggs, flour, and castor sugar until smooth.

Pour over the fruit and bake at Gas mark 3 / 325oF. / 170oC. for 45 - 50 minutes until well risen and golden brown.
