WHAT YOU WILL NEED :-
A baked 8" sweet pastry case.
INGREDIENTS for Filling :-

METHOD :-
Mix the sugar, fruit juices, and melted butter in saucepan.
Beat the eggs and place in a nylon sieve and sieve the eggs into the fruit juice mixture.
Add the double cream.
Place on the stove and heat until just becoming thick, but DO NOT BOIL.
Pour filling into the baked pastry case and bake on a tray at Gas mark 5 / 375oF. / 190oC. for 20 - 30 minutes until just set.
Allow to cool on the tray before moving to the refrigerator until required.
