METHOD :-
Crush the garlic, add it to the milk, and bring to the boil.
Allow to infuse for 15 minutes.
Strain off the garlic from the milk and discard the garlic.
Cream together the yolks, sugar, and cornflour until smooth, light in colour, and thick.
Pour the flavoured milk onto the egg mixture, stirring constantly.
Return the mixture to the heat and stir until it begins to thicken, but do not allow to boil.
Remove the pan from the heat and allow to cool completely.
Whisk the cream until floppy and then gently combine with the cool garlic mixture.
Place in the freezer for 2 hours.
Remove from the freezer and whisk for 2 minutes with an electric mixer.
Return to the freezer until required to be served.
