INGREDIENTS to serve 2 people :-

toast

butter

teaspoon

sun-dried tomato paste

basil leaves

ripe tomato

courgette

strong Cheddar cheese

METHOD :-

Toast two slices of bread.

Mix the butter and sun-dried tomato to form a paste.

Spread the paste evenly over the cold toast.

Shred the basil leaves and cover the paste with them.

Slice the tomato, the courgette, and the cheese thinly.

On one piece of toast, arrange a short row of tomato slices in one corner.

Overlap the tomato with a longer diagonal row of courgette slices.

Overlap the courgette with an even longer row of cheese slices.

Continue until the toast is covered with several diagonal overlapping rows of tomato, courgette, and cheese slices, and about half the topping has been used.

Repeat this arrangement on the other piece of toast to use up all the topping.

When ready to serve, grill until the cheese melts.
