MARINADES FOR BARBECUES

FRUITY MARINADE for white meat or fish to serve 2 people :-

chilli de-seeded & finely chopped

1

clove

garlic crushed

1

lime or lemon rind & juice

1

teaspoon

coriander seeds crushed

dessertspoon

fresh chopped herbs
e.g. coriander, parsley, basil

tablespoons

light olive oil

Mix the ingredients, season, coat the meat/fish, and leave 20-30 minutes before barbecuing.

DARK & STICKY MARINADE for red meats, chops, steaks, spare ribs, kebabs, or sausages to serve 2 people :-

tablespoon

dark muscovado sugar or black treacle

tablespoons

tomato ketchup

dessertspoon

Worcester sauce

tablespoon

pineapple or orange juice

½

teaspoon

dried chilli powder or
English mustard powder

Mix the ingredients, season, coat the meat, and leave ideally overnight or at least 30 mins before barbecuing.

HERB MARINADE for vegetables or fish to serve 2 people :-

clove

garlic crushed

1

shallot finely chopped

1

teaspoon

Dijon mustard

1

teaspoon

thyme chopped

tablespoons

cider vinegar

4

tablespoons

sunflower oil

Mix the ingredients, season, coat the vegetables/fish, and leave 15 mins before barbecuing.
