METHOD :-
Add half the butter & oil to a frying pan, and heat until hot.
Add the chicken thighs and seal all over for about 8 - 10 minutes until brown.
Remove the chicken to a plate.
Core and quarter the apples. Add the remaining butter & oil to the pan and fry the apples until just golden. Remove the apples to a plate and drain well.
Thinly slice the mushrooms and fry in the pan until just soft.
Return the chicken and apple to the pan along with the apple juice or calvados and the creme fraiche or double cream. Stir until smooth and bubbling.
Simmer for about another 10 minutes before serving.
