JAPANESE CHICKEN

INGREDIENTS to serve 4 people :-

chicken thighs

Marinade :-

½

lemon

4 tablespoons

Japanese soy sauce

2 tablespoons

dry sherry or saké

1 teaspoon

ground ginger

1 dessertspoon

honey

METHOD :-

Place the chicken thighs in an ovenproof dish.

Roughly chop the half lemon and mix with the remaining ingredients to form a marinade.

Pour the marinade over the chicken and place in the refrigerator overnight.

Preferably turn the chicken in the marinade at least once.

Bake uncovered at Gas mark 4 / 350oF. / 180oC. for 25 - 30 minutes until golden.

Baste the chicken thighs occasionally.
